Monthly Menu: July 2024

 


Wow, it's been a while. This roller coaster called life has definitely had its ups and downs the last few years. So, I'm trying to reestablish some habits that have been really helpful to me in the past. Posting monthly menus was always a big help, so even though we are already halfway through July, here are my dinner plans for the month:

Monthly Menu: June 2021


 Here are my dinner plans for 30 days of June.

*This summer our mornings are busy with camps, so I stocked up on quick breakfast items like mini quiches, sausage/pancake corndogs, etc.
*Lunch is usually leftovers or sandwiches.
*We usually only eat-out once a week. The rest of my meals are homemade, mostly from scratch.

 Week 1 Menu

Book Review: The Border


This story of four teens running for their lives is full of raw emotion and intense moments. Regardless of your opinions on immigration, this story gives a vivid picture of the dire situations many people face and should cause us to be more thoughtful about this complex issue.

This is a great read for adults and mature teens due to some language, mild sexuality and violence.

Book Review: This is Where it Ends





Disclaimer: I can not recommend this book to teens for two reasons. First, for the use of the F-word. If it's not allowed in TV or movies for teens, it should't be in books for them either. (See my notes below.) Secondly, two of the main characters are females who claim to be in love, and although there is a strong push to make it a cultural norm, many parents and teens, like my family, still find homosexual relationships inappropriate. (See my notes below.) I will however review this book for it's literary quality.



Tyler feels he has lost everything - well, more like everything has been taken from him. He's angry, lonely, desperate, and feels the only way to make it right is to take his frustration out on the world that has betrayed him - Opportunity High School. His method - a deadly shooting spree - that's how he will not be forgotten.

Caught in the firestorm of Tyler's wrath, this story is told from the perspective of the four people he seeks to destroy - Claire, Autumn, Slyv, and Thomas.

Like: This book is extremely well written from a teenage point of view - not adult thinking, but emotional based and invincible mentality.

Like: It's not political, it's not a social commentary, or philosophically motivated - just telling a story.

Dislike: Culture's misunderstanding of love. Autumn & Sylv's relationship is a perfect best friend relationship, it doesn't need to be physically intimate. Like most teen relationships, it lacks the maturity it needs to really understand the commitment required to make it last.

Dislike: F-word just seems randomly thrown in there and is completely unnecessary when there is very little language in the rest of the book.

Summer Fun: Beating Summertime Boredem

Keeping kids busy during the summer months can be quite a task and unless you have an unlimited budget for camps and activities, you might have to get creative to avoid the "B" word (BORED!).

Here's how we kept busy last summer:

Make It Monday 
       -craft projects: get on Pinterest and finds some cool ideas, then hit the craft store and make      something cool
       -dig through the recycle bin and build something: a city for cars, a robot, and house for stuffed animals

Take a Dip Tuesday
       -hit the local pool, turn on the sprinkler, or have a water balloon fight


Work Day Wednesday
        -what projects need to get done around the house: yard work, sorting toys, cleaning out closets; give kids simple tasks to help big projects get done


Thinking Thursday 
        -exercise your brain with board games, read aloud books, science experiements


Fun Day Friday
         -take day trips to local museums, parks, cultural markets, go to the movies, or work on a project from earlier in the week

A couple of fun apps we used this summer:
Geocaching (go treasure hunting wherever you are)
DIY (try new things, make cool projects, and earn badges for completing challenges)

Let's Have a Lego Party







My Kids LOVE Legos! One of their favorite events is a free Lego build at the Library a couple of times a year. They have giant piles of Legos and kids just build and create to their heart's content.





I have a son and daughter who both have February birthdays, so we had a Lego Party to celebrate them turning 9 and 10.


It was so easy to plan and everyone has so much fun! We dumped a huge pile of Legos onto the rug, turned on "The Lego Movie", had a few themed snacks, and everyone had a great time. The kids played, the parents talked, and the clean up was easy.



Fun ideas we tried:

- Use dollar store yellow paper cups - draw "Minifig" faces on them.

- Frost brownies and/or rice cereal treats with red, orange, yellow, green, and blue - top with M&M's (M side down) to look like building bricks.

- Buy silicon molds in the shape of Minifigs and Bricks to make chocolate treats and ice cubes.

Cheddar Bacon Potato Soup



4 medium sized potatoes, peeled and chopped
2 c. shredded cheddar cheese
2 c. cooked, crumbled bacon
1 can cream of chicken soup
1 c. sour cream
2 c. milk
Salt and pepper to taste

Combine all ingredients in a crockpot and cook on low for 4 hrs. Stir occasionally. Serve with rolls or  in a bread bowl.

She Reached for Help



"I do it all by myself!" the little girl huffs as she tries for the umpteenth time to button her coat.
Do you ever feel like that? So frustrated that you don't have the strength, energy or know-how to do something, but too full of pride to ask for help? I know I do. A lot!

My problem is I need to get over myself and ask for help. But I don't want to bother other busy ladies (or be rejected by them). So I pretend to be superwoman and do it all myself, looking beautiful and all put together while I'm at it. When in reality, on the inside I pout and complain that no one will help me and I'm so overwhelmed.

We all reach points of desperation in our lives. We've spent all our money, given all our energy, tried every trick in the book - there's no way out, no hope left - except Jesus.

In Matthew 9 and Luke 8, there's a story of a woman who was at that point - she had been bleeding for 12 years with no healing, until she reached for help:

 And behold, a woman who had suffered from a discharge of blood for twelve years came up behind him and touched the fringe of his garment,  for she said to herself, “If I only touch his garment, I will be made well.” Jesus turned, and seeing her he said, “Take heart, daughter; your faith has made you well.” And instantly the woman was made well.    Matthew 9:20-22 (ESV)


And there was a woman who had had a discharge of blood for twelve years, and though she had spent all her living on physicians, she could not be healed by anyone. She came up behind him and touched the fringe of his garment, and immediately her discharge of blood ceased. And Jesus said, “Who was it that touched me?” When all denied it, Peter said, “Master, the crowds surround you and are pressing in on you!” But Jesus said, “Someone touched me, for I perceive that power has gone out from me.” And when the woman saw that she was not hidden, she came trembling, and falling down before him declared in the presence of all the people why she had touched him, and how she had been immediately healed.
And he said to her, “Daughter, your faith has made you well; go in peace.”      Luke 8:43-48 (ESV)

The bleeding woman had reached a point of desperation, she had no other hope for healing, so she reached out just to touch the edge of Jesus' robe, trusting that was enough for her healing. Her simple, consuming faith in the power of Jesus made her well.

I need a desperate and consuming faith in the power of Jesus - to change my life, set me free from the sin of pride, for humility to ask for help from others. God has put people in my life to help with physical needs, emotional encouragement, and spiritual maturity.  I need to accept, welcome, ask for help and stop presuming I have it all figured out and can do it all by myself.

You've Been Egged by the Raulstons


You've been EGGED!

This was such a fun family activity we did to surprise some friends with a little Easter Treat.

First, we filled plastic Easter eggs with candy, 11 eggs per family you plan to "egg" (not chocolate if you live where it's warm, like Texas!), plus one empty egg.

Second, we hid the dozen eggs in the front yard of our friends at a time we didn't think they would be home.

Then, we posted this sign on their front door to let them know  about their surprise (find the free printable here: http://www.fabnfree.com/youve-been-egged-a-free-printable/):


We ended up "egging" 3 different families. All of the moms told me later about how much fun their kids had hunting the eggs.

I think Easter is the most important holiday we celebrate, but sadly we don't give it as much attention as it deserves. I'm always looking for fun new ways to make a big deal out of Easter that focus on the celebration of Christ's resurrection.

Recipe: Tater Tot Casserole

This is one of our family favorites! Hope you enjoy!



Tater Tot Casserole
1 lb. ground beef
1 can cream of mushroom soup
½ cup sour cream
½ c. milk
1 pkg. frozen tater tots
2 c. shredded cheddar cheese
1.   Brown beef in skillet on med-high heat, drain off excess fat.
2.   In 13x9 pan, mix beef, cream of mushroom soup, sour cream, and milk.    Then spread mixture evenly in the pan.
3.   In a single layer, place tater tots on top of the beef mixture.
4.   Sprinkle the cheese on top of the tater tots.
5.   Cover loosely with foil and bake at 350 degrees for 30 minutes.
6.   Remove foil and bake 5 more minutes or until the cheese is melted.
7.   Remove from oven and let stand 10 minutes before serving.

Book Review: The Simplest Way to Change the World

The Simplest Way to Change the World by Dustin Willis and Brandon Clements is a wonderful book about making Biblical hospitality an important part of the Christian life.

A topic often promoted yet rarely fleshed out, Biblical hospitality is something every Christian should be practicing but many are not because of fear or lack of understanding. 

"...It's important not to lose sight of the fact that much of the gospel's spread through history and geography has been on the back of the more ordinary sharing of lives through biblical hospitality..."

This thoughtful, practical book is a great resource to give Christians a clear understanding of why hospitality is Biblical, how to overcome fears and obstacles that prevent us from making it a priority, and many easy ways to implement hospitality into our lives.

 The authors write with a personal and light-hearted tone as they share their own successes and failures in hospitality.

There are also discussion questions at the end of each chapter to use in a small group or for personal reflection.

This has been a hot topic in our church and small group recently and I can't wait to share this book with many of my friends who desire to be more intentional about building relationships through biblical hospitality.

My Little Homemakers

My husband loves a clean home. It makes him feel relaxed. However, with homeschooling four kids plus an infant, my house cleaning radar is usually set to survival mode. Now grant it, my oldest daughter, who is 15 is a huge help. Let's call her Supergirl. But the middle three - the Artist (10), the Athlete (9), and the Animal (6) - would rather do almost anything other than CHORES!!
Then there's Tater Tot whose only 11 months old and her version of helping is to make a bigger mess to clean up!

So, I'm feeling overwhelmed with the housework. I want my home to be a place where my husband can feel welcomed and peaceful. Or at least not have sticky tables and Lego covered floors.

I have recruited the older four kids to take on more household responsibilities. For the past couple of years they have been doing Saturday morning chores (I don't know why we always do them on Saturday, we homeschool, we can do chores anytime, but alas, Saturday morning seems to be stuck with chores.)
Almost every weekend they clean the bathrooms and put their laundry away. They often dust, sweep, and vacuum. But it seems like the jobs are only done half way and Supergirl and I pick up the slack. Also, the daily cleanup doesn't happen like it should. So these are the things we're working on. Plus, I teaching them some kitchen skills in hopes that someday soon they can prepare a fine dining experience for the whole family - yeah right, I just want them to be able to make their own lunch.

Reflections: Psalm 3

I lay down and slept; I woke again, for the LORD sustained me. Psalm 3:5
 

Many of the psalms David wrote, like this one, are about his cries to the Lord to be saved, rescued, or relieved from his enemies. No matter how desperate his pleas, David always put his full trust and dependence in the Lord.

I strive to have this kind of relationship with God - where I can honestly cry out to Him with every big and small concern in my life, yet fully depend on Him to sustain me and renew me each day.

My youngest child has been the most difficult of my five babies. She's eleven months old and still not sleeping through the night. (I've been blessed that the other kids starting sleeping through the night much sooner.) When I read this verse today, I almost cried for the longing of a full night's rest, but was also somehow comforted by knowing the Lord will sustain me tomorrow despite how much sleep I get tonight. I know this season of life will pass, but it's so exhausting. Thankfully His mercies are new each morning!

Lord, I ask for physical rest and I know even if it doesn't come, you will sustain me and give me the strength and energy I need for each day to love and serve you by caring for my children and managing my home. Thank you for showing your great power in my weak life.

Reflections: Psalm 1

Blessed is the man who walks not in the counsel of the wicked, nor stands in the way of sinners, nor sits in the seat of scoffers; 
2but his delight is in the law of the LORD, and on his law he meditates day and night.  - Psalm 1:1-2

It seems everyone has advice for me on every subject - how I should raise my kids, how I should decorate my house, what to buy, what not to buy...on and on...especially on Pinterest, as much as I love it, that site seems to be full of know-it-alls (wait, I'm on there, oh well).

Sometimes it's hard to separate the bad advice from the good (and other times it's really obvious). I want to make good decisions for myself and my family, but all the chatter...it's hard to know what to do.

Psalm 1 reminds me to delight in God's law and to think on it daily, but why? Because it is the best source for wisdom in my life. When I have God's standard of right and wrong constantly on my mind, being distracted by sinful choices is less of a temptation. When God's word is in my heart, knowing what's best for my family and home becomes more obvious. Joyfully embracing the truth makes it easier to share with people, neighbors and friends, who are drowning in a sea of bad choices.

Lord, please give me the desire to meditate on your word day and night so that I may be blessed to walk in your ways. Help me today to delight in your law, to know and understand the truth of your word that I will gladly share it with those trapped in the way of sinners.

Rock of Ages

Currently my kids and I are reading through Big Truths for Young Hearts by Bruce A. Ware (a book I highly recommend). Today's lesson was on the importance of Jesus' resurrection. If Jesus died for our sins, why did He have to rise from the dead? The answer was two-fold: 1) If the penalty for sin is death (Romans 3:23) and Jesus was still dead, He would still be paying for sin. But, because He is resurrected the payment for sin is finished and complete and we can be completely forgiven of our sin through Jesus. 2) The greatest power of sin is death (Genesis 3:?) and if Jesus was still dead He couldn't claim complete victory of sin and therefore be unable to free us from sin's power.

Later in the day, rocking my baby to sleep, I started humming the hymn above, Rock of Ages. I started thinking about the words in the first verse and how the fifth line spoke of this very idea of a "double cure" for sin. I now have a new understanding and appreciation for this classic hymn.

Dear Jesus, thank you for being the double cure for my sin. Thank you for forgiveness and freedom from sin. Help me daily to turn away from sin and be grateful for your sacrifice!

A Majestic Name, A Personal Savior

O Lord, our Lord, how majestic is your name in all the earth...When I look at your heavens, the work of your fingers, the moon and the stars, which you have set in place, what is man that you are mindful of him, and the son of man that you care for him?  Yet you have made him a little lower than the heavenly beings and crowned him with glory and honor.  - Psalm 8:1, 3-5

I sing songs about the majesty of the Lord's name all the time, but rarely stop to think about what that means.
Majestic - high, beautiful, powerful- these words come to mind.
The Lord's name, YHWH, to the Israelites was so honored they refused to speak it aloud or write it down in fear of offending God. It means "I am that I am". The Creator, the Almighty, the Most High, the only GOD...

God is so mighty and powerful and yet so personal. Verses 4 & 5 tell me that God is mindful of me and given me glory and honor...me, who has wronged Him on every level; me, who has mocked, broken, and ignored His laws and commandments...God humbled himself to become like me to save me from myself, from my wickedness and despair, He endured a horrific death to pay for my disobedience...the most supreme being in the universe was thinking of me.

Here are my dinner plans for 31 days of October.
*We keep breakfast and lunch simple. Cereal or toast for breakfast. My kids have been loving fruit & veggie smoothies for lunch.

*We usually only eat-out once a week. The rest of my meals are homemade, mostly from scratch.

**These are recipes I plan on doubling and freezing the extras for days I don't feel like cooking in the next few months, since we are expecting a new baby around Christmas.

20. Beef Stew**
21. Eat Out: Pizza
22. Grilled Chicken with mixed veggies
23. Sesame Chicken with veggies over rice

Book Review: M is for Autism

M is for Autism is a book about a teenage girl with Autism written by teenage girls with Autism. The concept of this book is brilliant and the story is bravely and beautifully written.

If you've ever wondered about the struggle many kids experience when dealing with Autism, take a peek into the thoughts of M.  With complete honesty, she narrates the daily trials of desiring to be normal, feeling overwhelmed and anxious about unexpected situations, and trying to figure out who she is.

This book is appropriate for older children, teens, and adults - I highly recommend it to all three groups. It may be a quick read, but will have a deep impact on how the reader views those who struggle with Autism.

Congratulations to the students of Limpsfield Grange School and Vicky Martin for a job well done in writing this book. May your message and cause see great success and recognition!

Muffin Madness

It's been a long time since I've spent all day in the kitchen baking for fun! Today has been a blast! I had a pantry and fridge full of random ingredients to use up and four hungry kids that are always begging for a snack. So I pulled out my favorite Better Homes and Garden Cookbook (circa 1996) and got creative with the basic muffin recipe to make healthy and delicious muffins. I tried four different interesting flavor combinations, outside my comfort zone, and to my pleasant surprise my kids loved them:
Banana Coconut, Cherry Cheese, Lemon Fig, and Orange Coconut Plum



Here's my revised basic muffin recipe:
Mix:
1 Tablespoon flaxseed meal with 3 Tablespoons water (this replaces the egg in the recipe)
1/2 cup milk
1/4 cup water
1/4 cup cooking oil
Add fruits/flavors (see my list below)

Add to wet mixture:
1 3/4 cups all-purpose flour
1/3 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
3 teaspoons wheat germ

Mix well. Spoon into paper baking cups (or greased muffin tins). Bake at 400 degrees for 18-20 minutes. Remove from pan, let cool at least 5 minutes. Enjoy!!

Flavor combinations that I tried today:
Banana Coconut: 1 mashed banana, 1/4 cup shredded coconut
Cherry Cheese: 3/4 cup chopped cherries (I used thawed frozen cherries), 1/4 cup Parmesan cheese (next time I will probably use shredded cheddar)
Lemon Fig: 2 drops Lemon Essential Oil (or 1 teaspoon lemon extract), 1/4 cup fig jam
Orange Coconut Plum: 2 drops Orange Essential Oil (or 1 teaspoon orange extract), 1/4 cup shredded coconut, 1/4 cup plum jelly

Book Review: Since You've Been Gone



Since You've Been Gone is a  fast-paced, intense story,  where author Mary Jennifer Payne deals with hard teen issues like bullying and abuse in a realistic way. Fifteen year old Edie moves with her mother to London to escape an abusive father.  Her mother promises that this move will be different, a place they can be safe, but that dream is shattered when Edie's mother disappears. Too scared to go to the police, Edie and her unlikely friend are determine to solve the mystery of her mother's disappearance.

Although I felt like the story had an abrupt ending and wrapped up too quickly, it was entertaining and kept my interest throughout the entire plot line. The main characters were well developed - I didn't always understand why Edie acted the way she did, but her background explains a lot of her irrational decisions. I also appreciate how the author dealt with difficult teen issues without being overly graphic or inappropriate for teen readers. This would be a good book for high school students who like thriller/mystery fiction.
